Monsieur Marcel's Quiche au Poireaux
Serves 8
This classic quiche recipe from Monsieur Marcel is quick and easy, and hits all of our major food craving and health requirements with cheese and green vegetables.
  1. 1oz butter
  2. 2 cups leeks, sliced
  3. 1 cup artichoke hearts
  4. 4 large eggs
  5. 1¾ cup heavy cream
  6. 2oz Laura Chenel's fresh chèvre
  7. 1oz St. Loup goat cheese
  8. 1 9" frozen or pre-made pie crust
  1. Preheat oven to 300°F
  2. Melt the butter in a skillet over medium heat. Add leeks and sauté until tender. Add artichoke hearts and continue to sauté for 3-5 minutes.
  3. Spread vegetables evenly over bottom of pie crust.
  4. In a bowl beat together the eggs, cream and fresh goat cheese.
  5. Pour cheese mixture over over vegetables in pie crust.
  6. Arrange thin slices of St. Loup cheese over top of quiche.
  7. Bake for 25 minutes. Enjoy!
