Sparkling wine and cheese? Yes, please. Peju Province Winery’s Sparkling Cheese Fondue is fun, celebratory, and deliciously easy.
  1. 1 clove garlic, peeled
  2. ¼ cup butter or margarine
  3. ½ red bell pepper, chopped
  4. ½ green bell pepper, chopped
  5. ¼ cup all-purpose flour
  6. 12 ounces Bubbles Club Brut
  7. 1½ pounds mild cheddar cheese, shredded (about 6 cups)
  1. Halve garlic cloves and rub the cut sides on the inside of a 3-quart saucepan. Discard garlic. Add butter and melt over low heat. Add chopped green and red peppers and cook 2 minutes. Add flour and cook, stirring constantly, 2 minutes. Increase heat to medium-high and add Brut. Bring to a boil and cook, stirring constantly, 2 to 3 minutes.
  2. Reduce heat to low and add cheese, a handful at a time, stirring in between additions. Stir until mixture is thick and smooth. Serve immediately with fresh bread or pretzels.
