LaClare Carmel Apple Cinnamon Goat Cheese Bars

- Crust
- 2 cups all-purpose flour
- ½ cup brown sugar firmly packed
- ½ tsp. cinnamon
- Pinch of sea salt
- 1 cup unsalted butter softened
- Goat Cheese Filling
- 2 Granny Smith apples peeled, cored and diced
- ¼ tsp. cinnamon
- 4 4 oz. LaClare Apple Cinnamon Goat Cheese Logs softened
- 8 oz cream cheese softened
- ¾ cup sugar
- 3 large eggs
- 1 tsp. pure vanilla extract
- Topping
- ¾ cup brown sugar firmly packed
- ¼ cup sugar
- ½ cup all-purpose flour
- ½ cup old-fashioned oats
- ½ cup butter softened
- ½ tsp. cinnamon
- Caramel sauce for serving
►Preheat oven to 350°F. Line a 9x13 baking pan with parchment paper.
►First, make the crust. In a large mixing bowl, whisk together flour, brown sugar, cinnamon and salt. Add butter and cut it into the flour mixture, using your hands, until it’s crumbly and moist. Press into baking pan and set aside.
►For the filling, in a small bowl, toss together apples and cinnamon. Set aside. In a large bowl, combine Apple Cinnamon Goat Cheese, cream cheese, and sugar and beat until light and fluffy. Add eggs one at a time, beating well between each addition. Mix in vanilla and salt. Spread over the crust and top with apple mixture.
►To make topping, whisk together brown sugar, sugar, flour and old-fashioned oats. Add butter and cut it into the flour mixture, using a fork. Top the Goat Cheese filling.
►Bake 55 minutes, until the Goat Cheese filling is slightly jiggly in the center. Let cool and then refrigerate for 2 hours before serving.
►To serve, drizzle with caramel sauce and slice into squares.
