Island Brebis

This week’s fan photo winner is Washington-based Glendale Shepherd, who shared a delectable pic of their Island Brebis. A raw sheep’s milk tomme, it’s aged from three months to one year, during which its brushed, washed, and flipped to ensure proper development. The end result is a sweet and nutty cheese, which even earned a 2014 Good Food award. They recommend pairing this beauty with an IPA, to which we say, “Yes, please!”
