It’s no surprise that grilled cheese trucks have become de rigueur these days. They’re fast, portable, and loved by (almost) everyone. As if crispy bread and gooey cheese weren’t enough, grilled cheese trucks across the country are raising the stakes with ingredients like caramelized onions and short ribs. Yum.

Roxy’s gained notoriety when they competed (and almost won) in Food Network’s “The Great Food Truck Race.” Despite the loss, fans still flock for their indulgent creations like the Green Muenster, made with guacamole and bacon.
