"My first visit to Bordeaux, France, was nearly a decade ago, and I remember it very well. It was my first encounter with @baudetmillet, an unassuming little restaurant tucked away on Rue Huguerie," says contributor @jennricewrites. "Let me rephrase: There’s a cheese cave in the basement, complete with a cow-mooing sound machine. It was one of the most memorable cheese expeditions of my life—so memorable that it lured me back to Bordeaux again."
That`s because inside Baud et Millet is a cheese lover`s paradise: more than 100 cheeses from all across France lie within. For only $42, they`re yours to taste as much as you`d like.
"You can descend into the cave as many times as your dignity allows, and dignity becomes negotiable when you’re faced with perfectly aged Roquefort and creamy Camembert de Normandie," Rice adds. Tap our link in bio for the full read. 🇫🇷 🧀

On April 2, 2025, President Donald Trump issued an executive order implementing a broad set of new tariffs, or taxes on products imported from other countries, dubbing the occasion “Liberation Day” in recognition of what he called the United States’ “declaration of economic independence.”
Since then, specialty cheese—not to mention the US and global economies—has been roiled by the fallout. Importers, distributors, retailers, and cheesemakers on both sides of the Atlantic have felt the strain of higher costs, reduced demand, and economic anxiety. Even as regulators have indicated that the highest tariffs will be downgraded sometime in early 2026, 2025 will go down as the year uncertainty became the industry’s new normal.
If tariffs touched your business last year—and they probably did—this is essential reading. Tap the link in bio for contributor Alexandra Jones` (@arockjonestown) story.

We`re thinking about spring—and getting plenty of Vitamin C to last us through the winter. 🍊
Spring means fresh milk, cheese, and flavors: burrata and pomegranate seeds, feta with apricot jam, gouda with wildflower honey, to name a few pairings.
For this plate from our Spring 2025 issue, we collaborated with @saxelbycheese to capture the spirit of the slow agriculture movement and a feeling of the ground thawing as nature awakens. 🌿

The winding roads of Appalachia’s Blue Ridge Mountains are characterized by jutting pine trees, sprouting wildflowers, and a hazy blue blanket of mist. The serenity and mystique surrounding these mountains have long drawn artisans, makers, and storytellers to take root in the foothills.
That same allure brought cheesemaker and glassblower @victorchiarizia to Fairview, North Carolina, in 2005. A self-starter by nature, Chiarizia fell in love with the traditional methods of crafting cave-aged cheeses.
In 2010, he took a backhoe to the side of the mountain on his property and carved his own cheese cave, launching @blueridgemountaincreamery. Little did Chiarizia know, this cave—a testament to his creativity and grit—would soon withstand one of the most devastating natural disasters to ever hit North Carolina: Hurricane Helene.

"To appreciate cheese as it was intended, without melting it or hiding it, is something else. That’s when you taste its true character," says Emily Ackerman (@emily_annenl), @thehopefarmfairhope`s chef.
On the menu, cheese might be paired simply with housemade crackers, pickled blueberries, or the farm’s pepper jelly to allow the cheese’s flavor to shine. But sometimes it takes a playful turn, such as the brown sugar-dusted brûléed goat cheese currently starring on the Farm Board.
