One Cheese, Five Ways: Mighty Mascarpone


When you think of mascarpone, decadent, layered tiramisu likely comes to mind. While the fresh cheese is indeed used in many sweet applications, savory ones can be just as special. Made simply with heavy cream (instead of whole milk, like most cheeses) and acid, it’s often compared to cream cheese or crème fraîche, but mascarpone is uniquely sweet and rich. Use it to up the indulgence factor in pizza, soup, pasta, and more—spring veggies have never known a more luxurious partner.
