When cheese sales came to a halt in the early days of the pandemic it prompted David Jowett of @kingstonedairy to reconsider his business plan of producing only one (albeit delicious) soft-ripened cheese.
And so, Ashcombe was born. While Jowett may not have had the proper equipment for pressed cheese, it didn't stop him from winning @britcheeseawards Supreme Champion. The success of this #cheese highlights the resilience and innovation of the dairy industry in the face of challenges.
